Method

This vibrant salad combines creamy burrata, peppery rocket, juicy mixed berries and pomegranate arils with a sweet and gently spiced hot honey vinaigrette. It works equally well as a light main course or an impressive side dish for sharing.
Whisk together the olive oil, honey, lemon juice or white balsamic, chilli flakes, sea salt and black pepper until combined.
Toss the rocket leaves with half of the dressing and arrange on a serving platter.
Tear the burrata over the rocket.
Scatter the mixed berries and pomegranate arils over the salad.
Spoon over the remaining dressing and serve immediately.

Helpful tips

Why dress the rocket first?
Coating the rocket with part of the dressing helps distribute flavour evenly throughout the salad while keeping the remaining vinaigrette available for finishing.

When should the burrata be added?
Add the burrata just before serving to maintain its texture and presentation.
